Most corrosion inhibitors function by forming a barrier between the metal surface and the fluid.  Without a corrosion inhibitor, corrosive fluids can quickly react with the metal surface, causing major losses of metal wall thickness. And in the case of localized corrosion, corrosive fluids can even eat completely through the metal. The corrosion time lapse video below shows  the reaction of hydrochloric acid on a steel coupon at room temperature when no corrosion inhibitor is present.  Hydrogen gas bubbles form at the surface of the metal as the acid reacts with the steel.  In this example, acid also dissolves iron from the steel, which results in a loss of wall thickness.
